Simple Answers to Common Questions

What is gluten? Isn't it surprising how many people ask you that question?

Here's our simple answer:
Gluten is the general name for one of the proteins found in wheat, rye and barley. It's the glue that holds together baked goods and pasta. It gives elasticity to dough, helping it to rise and to keep its shape, and often giving the final product a chewy texture.

Of course, those of us with gluten sensitivity know that it can also hide in other places such as "natural flavors," modified food starch, MSG, lecithins, textured vegetable protein, emulsifiers, soy sauce, prescription and over-the-counter drugs, even some vitamins. 
Did you know that you can even pick up traces of gluten by licking an envelope because the glue might contain wheat?

  1. I had to come online after nearly dying last night from your cookies. I was so happy to find them as I had heard about them. I cannot have potato, pnuts or tree nuts, and no soy. I excitedly read the $7 package of only 14 cookies and then I had my son and a random customer check the box for the Contains: ..... label to be SURE they were safe for me to eat. They are NOT and it wasn't until AFTER i had hives and eyelids swelled up and breathing HORRID, thank GOD i have epi pen and steroid and a breathing machine here!!! My daughter ran downstairs and it took her five minutes to find a teeny tiny processed on pnut and tree nut equipment warning at the bottom of the package in a smaller font under the company address at the very bottom of the bag no where near the nutrition info nor the Contains: statement. I hold your company at higher expectation due to the gf and safety issues!! I will be calling your company on Monday.
